Tashmore Games is one developer working closely with AI tools on design, code and content. That lets a very small studio build a game with a very large world.
Market Tycoon

You take over a small neighborhood market. One cashier, two staff, half-full shelves and a little debt to the wholesaler.
From there it is up to you. Set prices, order stock, hire people, open a second branch, then a third. Grow across the city, the region, the country and eventually the world. There are no chapters and no ending; your milestones are your own.
Every country in the game is a data pack with its own cities, competitors, holidays and a catalog of fictional brands, so the world can keep growing after launch.
